A {sweet} DIY: Chocolate cake in a Mug.

Many years ago after I had just qualified and my best friend, Ilse and I rented a flat together. We were terrible cooks and many of our dinners consisted of 2 minute noodles, toast or provitas and cheese….
Ilse’s Mom would always worry about us and if we were eating so one day she gave us a mini recipe book that she made for us with loads of really easy to do recipes that even we could handle.
One of the recipes in there was a microwave chocolate cake in a mug. no bowls, no mixers and no oven…easy peasy.
During winter this was a regualr after dinner treat, its so quick and easy! AND the best part is that it doesnt need any milk or eggs, saves you a trip to the shop 🙂

Heres the recipe:
Ingredients
5 T flour (all-purpose)
4 1/2 T sugar
2 t cocoa
1/4 teaspoon baking soda
1/2 t white vinegar
1/4 t pure vanilla extract
2 t vegetable oil
6 1/2 Tablespoons water

Method:
1.Using a large microwave safe mug, mix the first 5 dry ingredients in the mug.
2.After mixing well, make 3 depressions in dry ingredients.
4. Pour vinegar in one depression, vanilla in the other and the vegetable oil in third depression.
5.Pour water over top.
6.Mix well until smooth using a fork. – here you can add some chocolate chips, pieces of fudge or anything you would like to add into the cake.
7. Place in microwave and cook on high for *2 minutes, uncovered. Check with toothpick to make sure it comes out clean. Be sure not to over cook!
8. Top your cake with some chocolate icing, whipped cream or any topping you like and even add some fresh berries.
